If you’re fasting meat, here is a yummy option to add to your menu planning. This is my husband’s favorite recipe during the fast. Best of all, it only takes about 30-45 minutes to make, and if you need to feed a large family, the recipe is easy to double.
- 1 pkg Quorn Chik’n Tenders
- 1 pkg S&B Golden Curry
- 1 onion, cut into strips
- 1 green bell pepper, cut into strips
Other optional veggies:
- Chopped carrots
Use a very large skillet. In olive or coconut oil, saute onion, bell pepper and 1 pkg of frozen Quorn Chik’n Tenders per package instructions. Add 2 ½ cups of water and bring to a boil. Reduce heat and crumble S&B Curry Sauce into cubes. Allow to simmer until sauce cubes begin to dissolve and you can stir to blend with the water. Season with sea salt and pepper to taste. Continue to stir periodically. Once curry sauce is completely dissolved, reduce to low heat, cover and simmer for about 10-15 minutes. Serve over brown rice. Makes about 4 servings.
